Job Description

Position Summary:

Washington Golf and Country Club is seeking a skilled and creative Sushi Chef to join our culinary team. The ideal candidate will have a passion for Japanese cuisine, exceptional knife skills, and a commitment to delivering high-quality dishes that delight our guests. This position is responsible for preparing traditional and modern sushi, maintaining the highest standards of food safety and presentation, and contributing to an outstanding dining experience.

 

Key Responsibilities:

  • Prepare a variety of sushi, including nigiri, sashimi, maki rolls, and specialty items, with precision and artistry.
  • Ensure freshness and quality of all fish, seafood, rice, and other ingredients.
  • Work with Executive Chef/Executive Sous Chef to create a fresh, enticing menu that changes regularly for members.
  • Maintain clean and organized workstations in compliance with health and safety regulations.
  • Collaborate with the culinary team to develop seasonal and specialty sushi menus.
  • Engage with guests when appropriate, explaining dishes and accommodating special requests.
  • Manage inventory levels, monitor product rotation, and minimize waste.
  • Train and mentor junior kitchen staff in sushi preparation and knife techniques.
  • Uphold consistent portion sizes and presentation standards.

  Qualifications:

  • Proven experience as a Sushi Chef or similar role in a high-volume or fine dining environment.
  • In-depth knowledge of traditional and modern sushi preparation, rice techniques, and knife skills.
  • Strong understanding of food safety, hygiene, and handling raw fish.
  • Creative approach to menu development and presentation.
  • Excellent organizational and time management skills. Ability to work under pressure while maintaining attention to detail.
  • Food safety certificate preferred in VA.
  • Culinary degree or relevant training preferred.

  Physical Requirements:

  • Ability to stand for extended periods.
  • Comfortable working in a fast-paced kitchen environment.
  • Manual dexterity for knife work and delicate preparations.
Schedule:
Wednesday - Sunday from 2:00pm until 10:00pm

Salary:
$25.00 per hour - $28.00 per hour
